Pancakes in the Oven!

So I do not have a non-stick pan that is induction stove friendly over here. My kids are missing those pancake brekkies. Mia begged me again for some pancakes this weekend. I realized how much we loved Walker Bros. Dutch Baby pancakes in Wilmette. And that I had all the ingredients and tools to make it. These are the only pancakes I can make my kids until we get back to Evanston.

2 T. butter
2 eggs
1/2 c. flour
1/2 c. milk
1/4 t. salt

Heat oven to 400 F. In 9 inch glass pie dish or  any baking dish with similar shape (I used a ceramic baking dish that was shaped like a bowl). Butter the bottom and sides of baking dish.
Beat eggs. Add flour milk and salt until combined. Dont overbeat. Pour into baking dish.
Bake 25-30 min until puffy and deep golden brown. Serve pancake immediately.
We love ours with powdered sugar and squeeze of lemon juice. And with a side of strawberries and sliced bananas is how we ate it at Walker Bros. Its like a thicker version of a crepe. So Nutella and Banana it. Or Raspberry preserves with lemon juice.
