Strawberries
Happy Father's Day! We went strawberry picking this morning, and brought home far too many strawberries. We will undoubtedly eat a bunch (till our fingers turn bright red), but they will disintegrate unless we do something with them ASAP! Which begs the question... what is your favorite strawberry recipe?

Strawberry pie is a summer favorite i our house. It is one of Jane's recipes and we love it. I'm sure you have a favorite pie crust recipe so just posting the filling here. I need to figure out how much strawberries to start with.

Pre-bake your pie crust
Take softened box of cream cheese and mix in some sugar and vanilla to taste. Spread as bottom layer of your pie crust
Take half your strawberries and puree. Add 1-2 to 2/3 cup sugar (depending on sweetness of strawberries) and a few tablespoons cornstarch. Cook on medium until thickened. Add water if you think too thick but taste as you don't want to water down the flavor. Add this layer to your pie.
Take remaining half of your strawberries and slice them. Add strawberry slices to top of your pie in a nice, layered design.
Chill the pie
This is an FAVORITE of mine if I ever come across rhubarb AND strawberries!
