More Tea Sandwiches

Jer, I'm not sure whether you already threw your cousin's bridal shower but here is what the mini strawberry shortcakes looked like. I just baked a cake in a sheet pan. Grabbed one of the smaller biscuit cutters. Popped them out, piped whipped cream and berries on top. My salmon on pumpernickel was a bit weak I thought in taste. But it did add a nice orange color next to the beige colored food. The sesame crusted chicken sandwiches were a hit. We bought scones, crumpets, clotted cream and jam. We also had a little tea tasting that we thought would be fun. Except for the fact that it was a billion degrees outside and everyone opted for the iced tea instead. So maybe an iced tea tasting would have been more appropriate for such a hot day.


Oh, I got those glass tiered serving platters off of target.com for only $20 a set. I bought little pots, painted them white, bought some white flowers, planted them and the guests took those home as gifts as well as it dressing up the room. I'm sure you will have so much fun with catering the shower. Looking forward to seeing some pics of your spread.

Lemon Potato Salad

Cath, here is the lemon potato salad recipe courtesy of bill's open kitchen. We're really going on a citrus kick this month.

1 lb 10 oz new potatoes
1 t. salt for boiling water
1/3 c. extra virgin olive oil
1/2 c. lemon juice
1 t. sumac (optional)
s+p
1 small green pepper, finely diced
2 large red chillies, seeded and finely diced
1/4 c. mint, chopped
1/2 c. parsley leaves
6 scallions, finely sliced

Cook potatoes until tender. Remember to undercook the potatoes a little because they will continue to cook when removed from water.
Combine olive oil, lemon juice and sumac. Season with salt and pepper. Pour half on the hot potatoes and stir gently. Cool. Add green pepper, chili, mint, parsley, scallion and remaining dressing and stir.
